Login to your web client and look for “preferences”/”mail”. 

The responder starts and ends at the selected date. If you don’t fill up the dates, it starts immediately after crossing the checkbox “send auto-reply message”.

If you prefer to set the responder in your Outlook, you can do it as well. The Outlook Connector will ensure the synchronization of this configuration with the Zimbra mail server.
